This Cookie is dedicated to my partner's Mum, Jude! Like me, he has fond childhood memories of sharing a cuppa and cookie and enjoying a yarn with his mum. Jude was a strong, nurturing and loving example of motherhood, and her beautiful ways are entrenched in her children. Creating this beautiful cookie is an extreme honour from one mother to another.

Long before fancy restaurants discovered the amazing zesty goodness of Finger Limes, they were an essential food source for Aboriginals for thousands of years. Our people have always understood the amazing healing properties of this fruit, which is full of folate, vitamin E, vitamin C, and potassium. The Finger Lime has been used as a topical treatment for many generations to treat infected sores.

Now, we get the absolute pleasure of using Finger Lime in this citrus cream cookie, with bursts of flavour and culture in every delicious bite.

The Finger Lime used in this cookie is grown on Bundjalung Country (New South Wales).
